Ageing Neptune

Because of the high levels of natural acidity that is a classic feature of Hunter white wines, Neptune is well suited to careful short-medium cellaring. With time, it will take on a lovely golden hue, with complex characters of honey, toast and melon. We recommend the bottles be cellared flat, in order to keep the corks moist. Even though we have had superb examples of Neptune aged for 15-20 years, we recommend consumption within 10 years in order to minimise the risk of losing bubbles.
