Full yellow colour, tending to golden. The bouquet is that of a fully mature, semillon, with freshly-buttered toast and honey, together with lemon marmalade notes. It’s mellow and complex to taste but also remarkably restrained, taut and composed for its age. It’s completely dry, and low in alcohol, with good length and a firm finish. There is plenty of acidity, and it must have been austere in its youth. It still has tightness at 16 years of age.

Aged Hunter Semillon
Hunter Semillon is renowned for its ability to age a long time. Since Stelvin screwcaps became the Australian industry standard, problems with deteriorating corks and premature oxidation have become a thing of the past. Hunter Semillon's high natural acidity confers freshness and vibrancy when these wines are young. Typically Hunter Semillons enter an awkward stage about years 5-8, when they transition to their aged characters. When aged, the fruit characters of these wines are less obvious, with honey and toast more obvious on the palate, along with a beautiful golden colour. Wine collectors can cellars these wines with no qualms for up to 5 decades.
